Today was a very difficult day for me personally. I made it through and still at the end of the day I have a family who looks to me for food. I could have ordered some high fat, unhealthy take-out for my family (which would have been so easy) or I could make something fast and healthy for them.
I felt guilty about the thought of feeding them the first choice, so I looked around the kitchen and came up with this:

Baked in the oven at 400 degrees for 1 hour.
While they were baking, I made veg chili
in which I added a can of black beans and diced tomatoes.
We busted those potatoes open and piled on the chili topped with vegan sour cream
chopped green onions
and a sprinkling of red pepper flakes
Simple. Quick. Delicious.
