Eating Irish food is a great way to get ready for Saint Patrick’s Day!
I have a delicious Irish Stew to share with you.
Irish Steak and Guinness Stew
Beef and Guiness stew is an Irish pub favorite.
I gave this stew a vegan makeover using Gardein Beefless Tips instead of beef to soak up that rich stout flavor. (These are amazing, my husband and kids who are meat-eaters love them.)
The Guinness has a very strong flavor in this stew, so if you aren’t a big Guinness fan, I would suggest using half the amount of Guinness and an equal amount of vegetable broth. (I of course used the full amount of Guinness!)
You should know that not all beers are vegan. Many beers use a fish product called isinglass to filter cask beers. Luckily, Guinness has confirmed that their Extra Stout is in fact vegan.
Sauté about 14 oz of beefless tips in 2 tbsp olive oil and 2 tbsp soy sauce until slightly browned, about 5 minutes. Reduce heat, add steak sauce and stir until beefless tips are lightly coated. Remove from heat and set aside.
You will now need to chop your veggies.
1 onion, diced
3 ribs celery, chopped
2 carrots, chopped
2 medium potatoes chopped into 1 inch pieces
3 cloves garlic, minced
In a large pot, sauté onions, celery, carrots, potatoes and garlic in butter or margerine (I used Earth Balance) for 3-5 minutes. You want to make sure the onions are soft.
Reduce heat and slowly add 2-12 oz bottles of Guinness OR 1 bottle plus 1 1/2 cups vegetable broth, gently stirring to combine.
Add 2 tbsp flour, 1 tbsp chopped fresh thyme, 1 tsp brown sugar, and salt and pepper to taste. Stir well. Add beefless tips and allow stew to simmer until Guinness reduces and stew thickens, about 40-50 minutes.
Add more salt and pepper if desired.
